Hotel and resort wifi in Thailand ranges from excellent to unusable, often in the same town. A data plan you can rely on is worth more here than in a country where you would always be on wifi anyway.

Why island coverage in Thailand needs a second look

Thailand's three main carriers cover the mainland thoroughly, and in Bangkok and the larger cities you will not notice which one you are on. The islands are a different question. Popular resort islands generally have workable service in the built-up areas, but signal weakens noticeably as you move along the coast or inland, and smaller or more remote islands can have very limited coverage regardless of carrier. Two things follow from this. First, if your trip is island-based, check coverage for the specific island rather than trusting a national coverage claim. Second, download offline maps before you travel, because the moment you most need navigation is often the moment the signal is weakest.

Will I have signal on the islands?

Usually in the main resort areas, less reliably as you move away from them. Coverage differs island by island, so check the specific island you are visiting. Downloading offline maps before you go is the cheapest insurance available.

Is it worth relying on hotel wifi instead?

Not as your only plan. Quality varies widely between properties, even at the same price level and in the same town. Treat wifi as a bonus and mobile data as the thing you can actually rely on.

How much data should I buy for a beach trip?

More than you would for a city trip of the same length, because you are more likely to be using mobile data when resort wifi disappoints. If you plan to stream or use a laptop hotspot, size up accordingly.
